The Great Freezer Clean-Out, Week Three

Recap of Last Week’s Challenge

Just to refresh your memory (or catch you up to speed), here were the items in last week’s freezer challenge I wanted to use up:

Here’s what I was successfully able to use:

  • I used both packages of the pork stew meat in an Indian-style garam masala dish, which I served over rice. The nice thing was, it made so much that we had it for dinner one night and lunches for multiple days. Good thing the flavor only got better as it kept developing!
  • I needed an easy dinner one night when I was sick and Matt was working out of town, so I cooked up the gluten-free chicken nuggets along with some newer GF nuggets we had and served them with a lot of cheesy vegetables on the side.
  • We used more of the blueberries in smoothies, although we still haven’t finished the bag

Unfortunately, that was all I was able to get to! We got hit with flu this week in our house which included a nice little visit to the ER (don’t worry, everyone’s fine) and had another evening we were out at a musical, so dinners were kind of all over the place. I did, however, use another bag of mixed fruit (not officially in last week’s challenge, but something in the freezer I needed to use up) in smoothies for dinner one night.

Current Weekly Challenge

I’m hoping that the sickness will all pass this week as we have a wedding we’re attending this coming weekend, but as it doesn’t look like a super promising week to try and hit anything too hard, I’m mostly keeping Week Three of the challenge pretty simple and just rolling over last week’s stuff to now and adding in a couple easy options:

Butternut squash: I’ll plan on using this in the same recipe I was going to last week — a black bean and chicken skillet dish from this website.

Mozzarella cheese: I’ll plan on using some of this in the above skillet recipe or maybe in a homemade pizza. Haven’t decided for sure.

Bananas: We need all the comfort food we can get with all the sickness we’ve been dealing with, so I’ll either make these into muffins or into our favorite banana bread recipe

Mixed veggies: Quick side dish for my kids’ favorite dinner of sausage gravy over rice

Blueberries: Smoothies
