
One of my big focus goals for February is to clear out both of our freezers of all the food that’s been sitting in there for more than a few months. I already went through and chucked everything that was no longer good or that I knew for sure I would never use, and now I’m going through the rest of the older stuff bit by bit every week until we’ve made our way through all of it. I’d love it if you followed along with your own freezer challenge!

Recap of Last Week’s Challenge
In case you missed it, here were the items I challenged myself to use last week:

And here’s what I ended up being able to use up:
- I used up all the mixed fruit bag in smoothies, as well as an additional mixed fruit bag (same mix), also in smoothies
- I used up all the brown bananas to make our favorite banana bread recipe (out of this GF cookbook, my absolute favorite for gluten-free baking)
- For lunch one day, I cooked Matt and I up a couple of the tilapia fillets and served them over some of the cauliflower rice. I topped both with a simple garlic cream sauce I made from scratch, and served carrots on the side. I had enough leftovers for the next day’s lunch, too! This effectively used up one of the four bags of cauliflower rice and two of the tilapia fillets, which means we have 4? left (I think), at least in that bag. I actually discovered that we also have a SECOND bag of tilapia fillets (unopened) in the freezer. Sheesh.
The only thing I didn’t get around to at all was the stew pork meat, which will get rolled over again into this new week’s challenge.

Current Weekly Challenge:
Pork stew meat – I actually found a second package of the pork stew meat, and since there wasn’t a huge amount in either one, I’m just going to combine them both in this week’s challenge and make up a big savory sauce of some kind and serve the pork over rice.
Mozzarella cheese – I’ll use this in the skillet recipe mentioned below.
Butternut squash – We have a chicken and black bean skillet recipe I used to always make that calls for butternut squash. It calls for monterey jack cheese, but I’ll just sub in the mozzarella.
GF chicken nuggets – We’ll make these up on the weekend when our son with celiac is home for lunches (since he usually eats at school during the week)
Bananas – I might just go for the standard banana bread recipe, but maybe I’ll branch out and try something different. We shall see.
Blueberries – I actually got a head start on the blueberries last week by using them in smoothies AND making blueberry muffins, but let’s see if we can use up even more this week, shall we?
